Each region of Iran provide a local delicious food for different occasions on the last days of the year. One of the traditional foods that is cooked in several areas of Iran is called  Shish Andaaz , but each city cook it in various ways with variety of ingredients. In fact, “Shish Andaz” is a food especially for “4shanbe Soori” that is the last wednesday of the year and also Norooz in Guilan, Shiraz and Zanjan. Shish Andaaz in Guilan is made with eggplant, in Shiraz with carrots and in Zanjan with dates.

Ingredients of Shish Andaaz (Guilan Version)

  • Ground walnut, 300 gr.
  • Eggplants, 5.
  • Sour pomegranate paste, 2 tablespoons.
  • Fried onion, 4 tablespoons.
  • Turmeric, salt, pepper and cinnamon as much as needed.

How to Cook Shish Andaaz (Guilan Version)

  1. Pour the ground walnut into a pan with 2/3 scale of water and spices on a mild heat to release oil.
  2. Then add 2 more scales of water and pomegranate paste and let it boil for half an hour.
  3. Chop the eggplants in small pieces and fry them to be golden.
  4. Mix eggplants and fried onions and add them to the ground walnut.
  5. Pour some cinnamon as well.
  6. Shish Andaaz needs 40 minutes to be ready.

  • Onion, 1.
  • Eggs, 4.
  • 5 tablespoon of sour orange juice.
  • 1 tablespoon of butter.
  • 1 tablespoon sugar.
  • Salt and pepper.

  1. Fry the onion, add grated carrots to it and roast them until the carrots are baked.
  2. When the carrots are baked, there’s no water in it and you can add sugar.
  3. Mix then well.
  4. Now add butter and sour orange juice, salt and pepper.
  5. Finally, break the eggs and put the pan lid.
  6. This simple dish would be ready in 20 minutes.

A very nutrient food with raisin and date to enrich bodily blooding and iron.

  • Half scale of seedless dates.
  • 1 small onion.
  • 1 scale walnut.
  • 1 scale raisin.
  • 1 teaspoon cinnamon.
  • Butter 30 gr.
  • Salt and pepper.

How to Cook Shish Andaaz (Zanjan Version)

  1. Fry the onions.
  2. Cut the dates to half and roast them in the mixture of butter and oil to be smooth enough.
  3. Mix them regularly in order not to be burnt.
  4. Then add ground walnut. Put the pan lid to be smooth on a mild heat.
  5. Now it’s the time to add fried onions, raisin and cinnamon.
  6. Mix them all well.
  7. Finally, break the eggs based on the number of guests.
  8. Do not mix eggs.
  9. This food would be ready in 20 minutes.
